Ingredients:
* 2 lb Shrimp
* 4 cup Water
* 2 each Laurel Leaves
* dash Salt * 2 Garlic Cloves, Peeled & Chopped
* 2 each 6 Oz. Mexican or Cream Cheese
* 1 1/2 cup Heavy Cream
* 1 cup Chicken or Beef Stock * 4 teaspoon Buffalo Chipotle Hot Sauce
Directions:
Wash the shrimp and place them in a sauce pan with the water, laurel leaves, garlic and a dash of salt. Bring to a boil, reduce heat and cook for approximately 7 minutes. Drain and shell the shrimp.
Cut cheese into chunks and using a blender or food processor, blend the cheese with the cream, the stock and the Buffalo Chipotle Hot Sauce. Add salt and pepper to taste. Heat the above in a double boiler, stirring constantly until it thickens. Add the shrimp and serve over rice. |
