• Get fresh shrimp head on or head off from Authentic Louisiana Seafood

• Get a pot big enough to cover your shrimp with about an inch of water

• Add salt

• Add 2 medium onions cut is quarters

• Add 1 large lemon squeeze juice into water then add the squeezed lemon skin
to water

• Add your spices usually Zatarain’s - liquid or bag - directions on the label for the
number of pounds of shrimp you are going to eat (Zatarains directions are on the
label of the bottle and are always the one we use)

• Bring to rolling boil

• When water is boiling add your shrimp

• Return to a boil for one minute or when you see shrimp turn pink

• Immediately remove from heat and add enough ice to cover the shrimp and stir
to get the ice throughout the shrimp pot –cover and let soak for 5 minutes – this
allows the shrimp to stop cooking and soak up your spices
