fresh (never frozen) while the "Head Off" and "Peeled" shrimp are

use bigger shrimp for frying or grilling and smaller sizes for boiling
or stir-frying.
There are hundreds of different recipes for shrimp, but
with Authentic Louisiana Seafood gulf shrimp, no matter how you prepare
it, you will feel like you are in a gourmet restaurant in the French
Quarter enjoying it.
You can buy from us in a variety of ways - with the
shell and the head on, with the shell on, head off, or head off and
peeled. No matter how you buy them. the quality shrimp from our local fisherman is second to none. Once you buy gulf shrimp from us, you will never get it from anywhere else.
Shrimp Boiling Tips
Put your water one inch below halfway point of your pot measure this from inside your pot.
Put in your seasoning (if using our Sal’s seasoning do not add salt it’s already in the seasoning!) If you are using other seasoning just follow the directions on the bottle or package!! Light the fire on the pot and cover with lid. When water comes to a rolling boil add your shrimp & cover the pot. Bring the pot back to rolling boil and time one minute.
Turn of the fire, uncover the pot and place about 2 to 3 #’s of ice in the pot. If you are outside hose the side of the pot to change the temperature of the water in the pot. This will help the shrimp absorb the seasoning. Let them soak for 30 minutes with the cover off!!!
REMEMBER DO NOT PUT THE COVER BACKON THE POT BECAUSE THE SHRIMP WILL OVERCOOK!!
EXAMPLE.
Shut shrimp off at 1 PM then at 1:10PM add ice and change the temp of the water. Hose down pot if outside – not recommend if you are inside!! Stir the shrimp so it changes positions top to bottom and bottom to top. Repeat at 1:20 and 1:30 after that scoop out your delicious Authentic Louisiana Seafood.
